Free Your Body is a biodynamic orange wine that balances oxidative extraction with freshness.
We cut our teeth on a conventional, reductive version of this varietal - a perennial peachy-pear poolside punch made with loads of intervention. We still love that wine, but Grenache Blanc has tremendous potential for low-intervention orange wine production. It is a seriously thick-skinned varietal with a lot of aroma, flavor, and tannin that are unlocked when fermented on the skins. Our goal was to extract the best character that the grape skins had to offer without mindlessly consuming them whole.
Production:
Fruit was picked in nearly equal portions over two passes on September 11 and September 15 at an average of 21.1° brix.
The first half was foot treaded and fermented on the skins for 7 days, then pressed to stainless steel tank.
The second half was direct to press, cold settled, then married with
the first half.
The Cuveé was aged on lees in stainless steel for 2 months, then racked to neutral French Oak barrique for 3 months.
The wine was bottled unfined and unfiltered, with 15 ppm sulfur (kmbs) added at bottling.
