We are Lambrusco lovers. As we tested coupe after coupe of fast red bubbles at a favorite downtown LA perch last summer, it became clear that we needed a car in the race. On a track filled with Lambo, we pay homage to Ferrari.
Enzo is a carbonic maceration of Freisa expressed as a pet nat riff on a Piemontese classic. Where in the heck did we find Freisa? The Siletto family farms a an incredible array of classic Italian varieties in Tres Pinos, near Hollister in San Benito County.
Production:
2 week carbonic maceration
Fermented with native yeast and bacteria
Racked off gross lees and blended with reserved juice
Secondary fermentation in bottle
No sulfur added, produced without fining, filtration, addition or subtraction
